CONFETTI FRIED CORN 
fresh or frozen corn kernels (7-8 ears, shucked)
1 small onion, 2 shallots, or 2-3 scallions, including tops, sliced
1/4 red, yellow, green, & orange bell peppers, diced (colorful)
1-2 small/medium jalapenos, diced
3-4 strips of bacon, fried crisp (reserve drippings or use 1-2 tbsp. olive oil)
1-2 tbsp. butter

Add 1-2 tbsp drippings, or olive oil into pan and fry onion. Next add bell and jalapeno peppers. Add corn kernels last. If adding bacon, do so at least 30 seconds to last minute of cooking.

This recipe is a quick and easy way to make corn fritters. I have made it several times with great success. It's very similar to a corn dog, but more substantial and not as greasy. The bacon adds flavor and makes the dish crispy.
