MARINATED VEGETABLES 
1 sm. can peas, drained
1 can mixed Chinese vegetables, drained
1 can French style string beans, drained
1 c. finely chopped celery
1 c. finely chopped onion
1 sm. jar pimientos, finely chopped
1 sm. pkg. slivered almonds, finely chopped
Salt and pepper to taste
1/2 c. white vinegar
1 c. sugar
1/4 c. salad oil

Combine peas, Chinese vegetables, string beans, celery, onion, pimientos, almonds, and salt and pepper. Combine vinegar, sugar and oil. Pour over vegetables and marinate at least 24 hours in refrigerator in a covered bowl. Can be kept for days like this. Serves 10-12.
