ITALIAN CREAM CAKE | |
1 stick butter 1/2 c. shortening 2 c. sugar 5 eggs 1 c. coconut 2 c. flour 1 tsp. baking soda 1 c. buttermilk 1 tsp. vanilla 1 c. chopped pecans FROSTING: 8 oz. pkg. cream cheese, softened 1/2 stick butter 1 box powdered sugar 1 tsp. vanilla 1/4 c. chopped pecans Combine butter and shortening; add sugar and beat until smooth. Separate eggs. Add yolks to creamed mixture and mix. Add flour and soda with buttermilk alternately. Stir in remaining ingredients. Add stiffly beaten egg whites. Pour into three 9 inch greased and floured cake pans. Bake at 350 degrees for 25-30 minutes. Let cool. Remove from pans and frost. Frosting: Combine cream cheese and butter. Add sugar and vanilla. Beat until smooth. Add pecans. Yield: 1-3 layer cake. |
