2 c. sugar
1 c. shortening
2 c. applesauce
1 c. preserves
4 c. flour, sifted
1 lb. raisins
1 c. chopped nuts
1 tsp. allspice
1 tsp. nutmeg
2 tsp. cinnamon
1 tsp. ground cloves
1 tbsp. hot water
2 tsp. baking soda
1 bottle maraschino cherries
1 tsp. vanilla

Cream shortening and sugar; add eggs, applesauce, and preserves. Dissolve soda in hot water and set aside. Add flour, spices, raisins, nuts, and cherries to mixture. Stir until well blended and fold in soda. Add vanilla. Bake at 350 degrees for 1 1/2 hours. Tube pan is good size. This is a good holiday recipe.
