BAKED CHICKEN WITH POTATOES AND
ONIONS
 
1 fryer, cut up
4 potatoes, quartered
4 lg. onion sliced
Lg. can Italian tomatoes
Olive oil
Oregano
Parsley
Garlic
Salt and pepper

Cover bottom of pan with oil, add chicken, potatoes, onions. Cover with tomatoes and season. Drizzle with oil. Bake at 350 degrees for about 1 hour or until tender. Broil last 5 minutes on each side of chicken to brown.

I found this recipe just because I opened my fridge and most of the ingredients. I worked a long day of retail and wanted something easy to make while I relaxed that tasted good. I altered it slightly, not having tomatoes, I subbed in carrots only because I needed to use them in the next couple days. I baked it until it was just about done ... about an hour or so and then I had some left over gravy that I heated up and served over it. It was pretty delicious! Even my super picky husband who wrinkled his nose up at me when I said I was making a new recipe from online seemed happy with it (he ate seconds at least). Thanks for a quick, easy, cheap, yummy idea!
