MEAT SAUCE: 1/2 lb. ground beef 1 medium onion, chopped 1 (8 oz.) can tomato sauce Salt and pepper to taste Combine these ingredients and cook until brown. MACARONI: 1/2 lb. cooked macaroni, drained 2 tbsp. butter, melted 1/4 c. grated Parmesan cheese 1/4 c. Italian bread crumbs Brush bottom and sides of 13 x 9 inch pan and dust with 1/2 of cheese and bread crumbs. Place 1/2 of the baked macaroni to cover the bottom of the pan. Cover this layer with all of the meat mixture. Place remaining 1/2 of baked macaroni on top evenly. Top with remaining bread crumbs and 1/2 of remaining cheese. CHEESE SAUCE: 4 eggs, beaten 4 tbsp. flour 3 c. milk 6 tbsp. butter Melt butter; add flour and stir until golden brown. Add milk, gradually, stirring constantly until slightly thickened. Slowly add eggs. Cook over low heat until thickened. Pour evenly over pan and sprinkle remaining cheese on top. Bake at 350 degrees for about 30 minutes or until top is golden brown. |
