LEMON STUFFED FISH FILLETS 
Fish fillets of your choice
1/2 c. finely chopped celery
1/4 c. chopped onion
3 tbsp. butter
4 c. bread cubes
1/2 tsp. grated lemon peel
4 tsp. lemon juice
1 tbsp. snipped parsley
1 tbsp. butter, melted

Cook celery and onion in 3 tablespoons butter until crisp-tender. Pour over bread cubes. Add lemon peel and juice, parsley and 1/2 teaspoon salt and dash of pepper. Toss together.

Place 2 fish fillets in greased baking dish. Spoon half of stuffing on each fillet. Top with remaining pieces of fish. Brush with butter. Sprinkle with salt and paprika. Bake, covered at 350 degrees until fish flakes easily when tested with a fork, about 20-30 minutes.
