BAKED STUFFED FISH FILLETS 
2 lbs. fish fillets
1/2 tsp. salt
1/2 tsp. pepper

STUFFING:

2 tbsp. chopped onion
2 tbsp. finely diced celery
2 tbsp. bacon drippings
1 1/2 c. bread crumbs
1/4 tsp. salt
Dash of pepper
Pinch of marjoram
Pinch thyme
1 tbsp. hot water

SAUCE:

Cook until thick:

2 tbsp. butter
1 1/2 tbsp. flour
1 c. milk
1/2 tsp. salt
Dash of pepper

Then add 1/2 pound grated cheese.

Wash and dry fish. Lay half of fish in bottom of a shallow rectangular baking dish. Sprinkle with salt and pepper.

STUFFING: Cook onion and celery in bacon drippings and stir into bread crumbs. Season with salt, pepper, marjoram and thyme. Add hot water and mix well. Spoon stuffing onto fish. Lay the rest of the fish on top.

SAUCE: Cook and stir constantly until thickened. Add cheese and stir until melted. Pour sauce over fish and bake in 350 degree oven for 30 minutes.
