BETTE'S EASY CARROT CAKE | |
2 c. sugar 1 1/2 c. oil 2 jars Jr. carrot baby food 2 tsp. vanilla 4 eggs (extra lg.) 2 1/2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1 c. chopped nuts Mix ingredients in order. Fold in nuts. Bake in greased 9 x 13 inch cake pan at 350 degrees for 30 minutes or until cake bounces back to touch. Cool and frost with cream cheese frosting. CREAM CHEESE FROSTING: 1 lb. confectioners' sugar 1/2 c. butter 8 oz. cream cheese 2 tsp. vanilla This cake is very moist and can last almost a week (if you don't eat it sooner) !! |
