PINEAPPLE UPSIDE DOWN CAKE 
1 c. white sugar
1 stick butter
2 tbsp. pineapple juice

Cook a few minutes, then add 1 can sliced pineapple in iron skillet.

CAKE BATTER:

1 c. flour
1 c. sugar
1 tsp. baking powder
5 tbsp. pineapple juice
3 eggs
1 tsp. vanilla
1/4 tsp. salt

Mix all ingredients together. Pour over first ingredients in iron skillet. Bake at 350 degrees for 25-30 minutes.
