PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. shortening
1/4 tsp. salt
1 tsp. vanilla
1/2 c. sugar
1 egg, beaten
1 1/2 tsp. baking powder
1 1/4 c. sifted cake flour
1/2 c. pineapple juice

Blend shortening, salt and vanilla. Add sugar gradually and cream well. Add egg and beat until light. Sift baking powder and flour 3 times; add alternately with pineapple juice. Stir until smooth after each addition.

Sprinkle 1/2 cup brown sugar (firmly packed) on bottom of 7x11 inch pan buttered liberally. Arrange 6 slices of pineapple on sugar and decorate with maraschino cherries. Bake in moderate oven 350 degrees 50 minutes. Serve with whipped cream. Serves 8.
