SWEET - SOUR PORK CHOPS WITH
ORANGE SLICES
 
4 pork chops, thickly sliced
Salt
Pepper
1 med. onion, diced
1 green pepper, cut in strips
1/4 c. cider vinegar
1 c. ketchup
2 tsp. sugar
1 1/4 tbsp. cornstarch
1/2 c. orange juice
1 tsp. soy sauce
1/4 c. brown sugar
1 orange, peeled & sliced

Sprinkle chops with salt and pepper. Brown on each side in large frying pan; remove. Add diced onion and green pepper to pan drippings. Cook over low heat until slightly tender; stir occasionally. Combine vinegar, ketchup, sugar and 1/4 teaspoon salt; add to onion and pepper. Blend cornstarch and orange juice until smooth; stir into ketchup mixture. Cook, stirring often, until sauce is thickened and clear. Return chops to pan; cover and simmer 1 hour or until tender. Uncover; add soy sauce and brown sugar, stirring thoroughly. Add orange slices; heat through. Serves 4.
