2 oz. butter 8 oz. fine oatmeal (oat bran) 4 oz. brown sugar Pinch of salt 1 tsp. cinnamon 2 tbsp. treacle (honey) 1 tsp. cream of tartar 1/2 tsp. bicarb. of soda 1 egg Flour, as needed, to take off stickiness Rub fat lightly into the oatmeal. Mix in other dry ingredients. Form into paste with the beaten egg. Knead until smooth, adding flour to counteract stickiness and hold mixture together. Roll out on floured board to 1/4 inch thickness. Cut in rounds, prick with fork, and bake on a greased cookie sheet at 350 degrees for 12 to 14 minutes. |
