BROWN SUGAR PEANUT BRITTLE 
1 c. granulated sugar
1 c. packed brown sugar
1 c. light corn syrup
1/2 c. water
1/2 tsp. salt
1/4 c. butter
2 or 3 c. raw peanuts
1 1/2 tsp. baking soda

Butter 2 (15 x 10 x 2 inch) pans and set aside. In heavy 3-quart saucepan combine the sugars, corn syrup, water and salt. Cook and stir until the sugars dissolve. Continue to cook until the mixture boils; stir in butter and clip candy thermometer to the side of the pan. Continue cooking, without stirring, to 250 degrees or thread stage. Stir in peanuts and cook, stirring constantly, to 300 degrees or hard crack stage. Remove pan from heat and stir in the soda, QUICKLY. Pour onto the buttered pans and spread evenly. Break candy into pieces when cool. Makes about 2 pounds.
