APRICOT PINEAPPLE DELIGHT SALAD 
2 (3 oz.) pkg. Jello, apricot, peach or both
2 c. boiling water
1 3/4 c. cold water
Juice of 1 lemon, optional
1 (16 oz.) can crushed pineapple, drained, save juice
2 or 3 bananas, sliced
1 c. miniature marshmallows

Dissolve Jello in hot water, add cold water and lemon juice and chill until partially thick. Fold in pineapple, bananas and marshmallows. Peaches and mandarin oranges could also be used if desired. Chill until set.

TOPPING:

2 tbsp. flour
1/2 c. sugar
1 c. pineapple juice
1 egg
2 tbsp. butter
1 to 1 1/2 c. Cool Whip
1 sm. pkg. cream cheese, softened
2 tbsp. grated Parmesan cheese
Shredded Cheddar cheese

Mix flour and sugar in pan. Beat egg and juice together. Stir into flour mixture and cook until thick. Add butter and let cool. Then fold in Cool Whip and cream cheese and spread on Jello. Sprinkle with cheeses.
