PASTA COBB SALAD | |
1 1/2 c. golden grain elbow macaroni (6 oz.) 1/2 c. Italian salad dressing 1/4 c. crumbled blue cheese 2 c. alfalfa sprouts Lettuce leaves 6 bacon slices, crisply cooked 8 oz. deli-style turkey or chicken breast, chopped (2 c.) 2 med. tomatoes, seeded and chopped 1 avocado, peeled, seeded and chopped 2 hard cooked eggs, chopped Cook macaroni as package directs, using 2 quarts water and 1 1/2 teaspoon salt; drain. Rinse with cold running water; drain. Toss macaroni with sprouts, salad dressing, and blue cheese; mix well. Place on lettuce lined 14 inch platter. Place remaining ingredients around pasta. Toss just before serving. Serves 8. |
