LARRY'S ROTEL 
8 c. quartered, peeled tomatoes
1 c. diced onion
1 c. hot jalapenos, diced
2 cloves garlic
1 tsp. salt

Mix all ingredients in large pot, bring to a rolling boil. Reduce heat, cover and simmer for 5 minutes. Pack in pint jars and process in boiling water bath for 30 minutes. NOTE: If using canned jalapenos, make sure they are well drained and washed to remove vinegar. Excellent for chili or nachos.
