PICKLED BEETS 
Wash beets. Cook until skin slips easy. Put in cold water.

BRINE:

2 c. sugar
2 c. water
2 c. vinegar
1 tsp. cloves
1 tsp. allspice
1 tbsp. cinnamon

Pack beets in jars, pour boiling syrup in jars. Put lids on jars. Process for 30 minutes.
