RHUBARB DESSERT CAKE 
1 1/2 c. rhubarb
1 1/2 c. brown sugar
1/2 c. butter
1 egg
1/2 tsp. salt
1 c. sour or buttermilk
1 tsp. baking soda
1 tsp. vanilla
2 c. flour
1 tsp. cinnamon

Cream sugar and butter. Add egg and salt. Stir in buttermilk, baking soda, vanilla and flour. Add rhubarb. Pour batter in greased 9x13 inch pan. Sprinkle with mixture of 1/4 cup sugar and cinnamon on top. Bake at 375 degrees for 40 to 45 minutes. Needs no frosting.

NOTE: Could add 1/4 cup sugar to batter as it is not a sweet cake.
