DELICIOUS CARROT CAKE 
2 c. flour
1 c. sugar
1/2 c. oil
2 (6 oz.) jars carrot baby food
1 (8 oz.) can crushed pineapple
1/2 c. coconut
2 tsp. baking soda
1 1/2 tsp. cinnamon
3 eggs
1/2 c. chopped nuts

Preheat oven to 350 degrees. In large bowl mix flour, cinnamon, sugar, carrots, oil, eggs, and soda; mix until smooth. Add coconut, pineapple and nuts and mix all together. Pour into 2 (8") cake pans and bake 30 minutes or until done. Cool and ice with cream cheese icing.
