BANANA SURPRISE MUFFINS 
1 3/4 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1/3 c. oil
1/4 c. jelly or jam
1/3 c. sugar
3/4 tsp. salt
1 egg
1 c. mashed ripe bananas

Combine dry ingredients in large bowl, make well in center and rest of the ingredients. Stir just until moistened. Spoon in greased muffin tin 1/3 full. Spoon teaspoon of jam or jelly in center and finish filling to 2/3 full. Bake at 400 degrees for 18 to 20 minutes. Makes 1 dozen.
