OLD - FASHIONED PEACH PRESERVES 
2 qts. sliced, peeled, hard, ripe peaches
6 c. sugar

Combine fruit and sugar; let stand 12 to 18 hours in cool place. Sterilize canning jars. Bring slowly to boiling, stirring frequently. Boil gently until fruit becomes clear and syrup thick (about 40 minutes). As mixture thickens, stir frequently to prevent sticking. Skim if necessary. Pour hot preserves into hot jars, leaving 1/4 inch head space. Wipe jar rims and adjust lids. Process 5 minutes in a boiling waterbath.

There is no need to 'skim' when making fruit preserves!! It's not a foreign substance - it's just bubbles of sweet, sugary goodness! As a matter of fact - they completely dissappear just as the preserves are nearing perfection - just stir the foam, it'll be all gone as your boil goes from rapid bubbling to slow, deliberate blub-blub-blub....oh, and it TASTES GREAT!!

Whew. Too sweet (for me) but I never know if I can cut the sugar without messing up the gelling up. Delicious though!!! Only my 2nd attempt at jam/preserves so pretty good!!
