APPLE MUFFINS 
3 sm. apples (2 1/2 inch)
3 eggs
Sugar substitute equal to 3 tbsp. sugar
1/2 tsp. vanilla
1/4 tsp. cloves
1/4 tsp. cinnamon
3 slices bread

Grate apples coarsely. Set aside. Beat eggs, sugar substitute, vanilla and spices. Crumble bread into egg mixture and mix well. Blend in grated apples.

Spoon mixture into 6 non-stick muffin pan molds. Bake at 375 degrees for about 45 minutes. Let cool before removing from pan. Makes 6 servings. (95 calories each).
