BANANA - ORANGE CHIFFON PIE 
2 tsp. gelatin
1/4 c. orange juice
1 c. mashed bananas
1 1/2 tbsp. lemon juice
1 tsp. grated orange rind
1/2 tsp. salt
3 egg yolks, slightly beaten
2 tbsp. sugar
1/2 c. orange sections
3 egg whites
1 baked 9" pie crust

Soften gelatin in orange juice. Mix together bananas, lemon juice, orange rind, salt, egg yolks and sugar. Cook over low heat, stirring constantly until thickened. Remove from heat, add gelatin and stir until dissolved. Cool. Add orange sections, mix well. Beat egg whites until stiff. Fold into banana mixture. Put in pie shell. Chill until firm. Very refreshing.
