ZESTY JALAPENO CREAM SAUCE 
Use this sauce in tacos, burritos, enchiladas etc. Or as a dip!

1 cup milk
1/4 cup Ranch dressing (Kraft or HIDDEN VALLEY®))
1 jalapeno (use more for a stronger flavor)
1 tbsp. butter
1 tsp. onion powder
1/2 tsp. garlic powder
a dash of cumin
1 tbsp. lime juice
(you can add a dash of pre-mixed Mexican seasonings also)

Removed seeds from the jalapeno (unless you like it hot) and mince. Melt butter in a small saucepan and sauté minced jalapeno for a couple minutes. Add milk and Ranch dressing. Stir to combine well. Stir in seasonings. Simmer at medium-low heat until sauce reduces and thickens. After the sauce cools a bit, add lime juice.

Note: If the sauce is too hot, the lime juice will curdle the mixture. Remember that the sauce will be even thicker after it cools. Just stir in a bit of milk to thin it out if you want.

For garlic lovers: Try using a clove of minced garlic instead of powder. Sauté garlic with the minced jalapeno. You may want to use rubber gloves when handling the jalapeno. The burning chemical will stay on your hands even after you wash them.

Makes about 1 cup.
