RHUBARB UPSIDE DOWN CAKE 
1 yellow cake mix (without pudding)
4 c. rhubarb, sliced
2 c. sugar
2 c. whipped cream

Preheat oven to 350 degrees. Prepare cake mix as directed on box and put into well greased 9"x13" pan. Sprinkle rhubarb over top of cake batter. Mix sugar and cream together. DO NOT WHIP. Pour cream and sugar mixture over rhubarb. Bake for 1 hour. Allow cake to cool before turning upside down or spoon or warm from pan if you can't wait.
