PIZZA ZUCCHINI CASSEROLE 
5 med. zucchini, sliced
1 lg. onion, thinly sliced
1 med. green pepper, diced
1 1/2 lbs. Italian sausage, cooked (bulk or sliced)
1/2 lb. mushrooms, sliced
1 c. well seasoned spaghetti sauce, thick
1/2 lb. Mozzarella cheese, sliced
Parmesan cheese, grated

Layer ingredients in 2 quart casserole ending with cheeses on top. Bake at 350 degrees, uncovered, one hour. Can be prepared meatless as side dish with roast, poultry or fish.

If you don't have prepared spaghetti sauce, "doctor" tomato sauce with garlic, oregano, fennel, salt, pepper and 1 tablespoon oil. Ground meat or diced bacon can be substituted for Italian sausage.
