TURKEY SMOKED SAUSAGE RICE
CASSEROLE
 
1 lb. turkey smoked sausage
1/2 c. sliced mushrooms
1/2 c. sliced carrots
1 med. zucchini, cut in half lengthwise and sliced (1 1/4 c.)
2 tbsp. butter
8 oz. tomatoes, undrained
1/4 tsp. basil
1/4 tsp. thyme
1 1/2 c. uncooked instant rice

Cut meat into serving size pieces; set aside. Saute next 3 ingredients in butter in skillet over medium high heat 3 minutes. Add next 4 ingredients and meat. Bring to a boil. Reduce heat to low; cover and simmer 5 minutes. Mix rice with liquid. Cover; remove from heat and let stand 8 minutes, stirring after 4 minutes. Makes 4 servings.
