TURKEY SMOKED SAUSAGE RICE
SKILLET
 
1 lb. turkey smoked sausage
1/2 c. sliced mushrooms
1/4 c. sliced carrots
1 med. zucchini, cut into halves lengthwise and sliced
2 tbsp. butter
1 can stewed tomatoes, undrained
1 c. water
1/4 tsp. dried basil leaves
1/4 tsp. dried thyme leaves
1 1/2 c. uncooked instant rice

Cut sausage into serving size pieces, set aside. Saute mushrooms, carrots and zucchini in butter in large skillet over medium high heat 3 minutes. Add tomatoes with juice, water, basil, thyme and sausage. Bring to a boil. Reduce heat to low, cover and simmer 5 minutes. Mix rice into liquid. Cover, remove from heat and let stand 8 minutes, stirring after 4 minutes. Makes 4 servings.

Such a healthy meal and extremely easy to make! I used brown rice and it takes a little longer to cook, but you could literally put whatever vegetables in it you want. My entire family loved it!
