TURKEY SMOKED SAUSAGE RICE
SKILLET
 
1 lb. turkey smoked sausage
2 tbsp. butter
1/2 c. sliced fresh mushrooms
1/2 c. sliced carrots
1 med. zucchini, cut into halves lengthwise and sliced (1 1/4 c.)
1 can (8 oz.) stewed tomatoes, undrained
1 c. water
1/4 tsp. basil
1/4 tsp. thyme
1 1/2 c. uncooked instant rice

Cut sausage into serving size pieces; set aside. Melt butter in large skillet over medium-high heat. Add mushrooms, carrots and zucchini; saute 3 minutes. Stir in tomatoes with juice, water, basil, thyme and sausage; bring to a boil. Reduce heat to low; cover and simmer 5 minutes. Mix rice into liquid. Cover, remove from heat and let stand 8 minutes, stirring after 4 minutes. Makes 4 servings.
