MOCK CRAB CAKES 
2 c. coarsely shredded unpeeled zucchini
1 c. seasoned bread crumbs
1 tbsp. mayonnaise
1 tbsp. seafood seasoning (Old Bay)
2 eggs, beaten
Oil

Combine all ingredients except oil in a large bowl; mix well. Let stand 10 minutes. Shape into cakes. Fry in 1/8 inch hot oil 3 to 5 minutes on each side. Drain on paper towels. Makes 4 to 5 large or 10 to 15 small cakes.
