PEACH MELBA 
3 tbsp. sugar, divided
1/2 pt. raspberries, pureed
1 tbsp. fresh lemon juice
2 peaches, peeled & sliced
1 pt. premium vanilla ice cream
4 purchased individual meringue shells
Fresh raspberries, for garnish

Stir 2 tablespoons sugar into puree and set aside. Mix remaining 1 tablespoon sugar and the lemon juice in bowl. Stir in peaches and let stand 15 minutes.

Scoop ice cream into shells and place on 4 dessert plates. Top with peaches and raspberry puree and garnish with raspberries. Makes 4 servings.
