SWEET POTATO DELIGHT 
3 med. sweet potatoes
1 sm. can crushed pineapple
1 lg. can Carnation milk
1 c. sugar
2/3 c. flour
1 1/2 tsp. cinnamon
2 tsp. nutmeg
1/4 tsp. salt
1 tsp. lemon flavor
2 eggs
1 stick butter

Boil potatoes in jackets until soft. Peel and mash. Mix together flour, sugar, nutmeg and cinnamon. Add butter to mashed potatoes. Beat eggs, add lemon flavor and small portion of milk; mix, add to potatoes. Gradually add flour mixture to potatoes a little at a time along with remainder of milk. Whip until fluffy. Pour into floured flat biscuit pan, not too thick. Sprinkle crushed pineapple over top of mixture. Preheat oven to 350 degrees. Bake for 45 minutes. Can serve as is or with whipped cream.
