POTUNA DELIGHT 
(Baked potato - tuna shells) - A.K.A. Tuna Boats.

4 potatoes, baked
1 c. mayonnaise
1/2 c. grated Cheddar
1/4 c. chopped green sweet pepper
1/4 c. chopped pimento or sweet red bell pepper
1/4 c. chopped onion or scallion
14 oz. (2 cans) drained solid white tuna

Halve baked potatoes lengthwise and scoop out. Toss (don't mash) with above ingredients and spoon back into skins (they're heaping). Bake 10 minutes in 400 degree oven.

Top off with:

1/4 c. mayonnaise
2 tbsp. grated Cheddar
1 stiff egg white (for optional puffiness)

Bake 10 more minutes at 400 degrees to lightly brown. Serves 4. Freezes well for reheating later.
