CONFECTIONERS' SUGAR POUND CAKE 
1 1/2 c. butter, softened
1 lb. confectioners' sugar, preferably sifted
6 eggs
1 tsp. vanilla
2 3/4 c. sifted cake flour

In large bowl of mixer, beat butter until creamy. Gradually beat in sugar, beating well after each addition until light and fluffy. Beat in eggs one at a time. Beat in vanilla.

Gradually and gently stir in flour - do not overmix. Turn into well buttered and lightly floured 3 quart tube pan (9 or 10 inch). Bake in preheated 300 degree oven 1 1/2 hours or until pick inserted comes out clean. Cool in pan 5 minutes - turn out on rack.
