GOLDEN CHEESE BAKE 
2 c. cooked rice
3 c. shredded carrots
2 c. grated sharp cheese
1/2 c. milk
2 eggs, beaten
2 tbsp. chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper

Combine cooked rice, carrots, 1 1/2 cups cheese, milk, eggs, onions and seasonings. Pour in greased 1 1/2 quart baking dish. Sprinkle with remaining 1/2 cup cheese. Bake at 350°F for 1 hour.
