SPINACH WITH RICE 
2 lbs. spinach
3 tbsp. olive oil
1 sm. onion
2 tbsp. tomato paste
Hot water
1/4 lb. rice
Salt and pepper

Chop washed spinach coarsely. Heat olive oil in frying pan; lightly fry chopped onion. Toss in spinach and saute a few minutes. Dilute paste in 1 1/2 cups hot water. Add to spinach. Cover and simmer for 15 minutes. Add 1/2 cup more of hot water; bring to a boil then add rice. Stir well and cook slow for 15 minutes or until rice is done.
