EASY SPINACH RICE 
4 c. cooked rice
1 med. onion, chopped
2 stalks celery, chopped
1/2 med. green pepper, chopped
3/4 c. picante sauce
1/2 c. sour cream
1 c. shredded cheese
Salt & pepper to taste

Saute onion, celery and green pepper until tender. Add rice; stir well. Stir in picante sauce and sour cream. Stir until sour cream is melted. Keep warm until serving, but do not boil. Just before serving, top with shredded cheese and allow to melt. Serve 4-6. (Note: This is a great meatless main dish. Quick and easy to fix, it's a tasty addition to a Mexican meal. If picante sauce is too hot for your taste, try your own favorite sauce.)
