SPINACH AND RICE LIBY'S STYLE | |
1 stick of Imperial or butter 1 big onion, chopped 1 pkg. frozen spinach, chopped 1 can Campbell's cream of mushroom soup 1 box Minute Rice, RAW 1 chunk cheddar cheese, grated (You can also if you like, add chicken, turkey, hamburger or pork. The meats should be cooked beforehand, and cut into small pieces. Drain all fats). In a big fry pan, melt Imperial or butter and put in the chopped onion. Cook until the onion becomes crystalized, then remove from heat. Add the soup and 1 soup can full of whole milk. Then add the thawed out spinach and fold into the soup. Salt and pepper to taste. Then add about 2 or 2 1/2 cups Minute Rice (must be Minute Rice, regular rice with turn this dish to glue) this in also. If it seems dry, add more whole milk. Now add your big hunk of cheese (at least 1/2 of it), fold in cheese carefully so as to get it all in the mixture. Now pour this into a dish that has been sprayed with Pam. Put the rest of the cheese on top and bake at 300 degrees for 45 minutes or until cheese has all melted and is crispy in the corners. This is very popular. |
