SAUCY ITALIAN ZUCCHINI 
3 med. zucchini, thinly sliced
1/2 tsp. salt
1/8 tsp. pepper
1/8-1/4 tsp. Italian seasoning, oregano or basil leaves
1 tbsp. butter
8 oz. can (1 c.) tomato sauce
1 c. (4 oz.) shredded mozzarella cheese
Or 1/4 c. grated Parmesan cheese

Heat oven to 375 degrees. In 1 1/2 quart casserole combine all ingredients except cheese. Sprinkle with cheese. Bake uncovered at 375 degrees for 30-40 minutes or until tender. 4-6 servings.
