AUNT ANNA'S CARROT CAKE 
2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 c. sugar
1 1/2 c. oil
3 eggs
2 c. grated carrots
Small can crushed pineapple
1/2 c. chopped nuts

Sift all dry ingredients. Mix oil, sugar and eggs, beat well. Add dry ingredients to this mixture and mix well. Add carrots, pineapple and nuts. Bake at 350 degrees for 35 to 40 minutes. Makes 2 large loaf pans.

ICING
1 box of powdered sugar
1/2 stick butter
1/2 stick butter
8 oz. pkg. cream cheese
1 tsp. vanilla

Blend.
