INDIAN BLACK-EYED PEAS 
1 lb. black-eyed peas (soaked and simmered - see below)
3 tbsp. oil
5 or 6 garlic cloves
1 1/2 c. onions
2 tbsp. curry powder
1 tbsp. cumin
1/2 tsp. cayenne or a dash hot sauce
3 oz. tomato paste
8 oz. can stewed tomatoes
3 tbsp. lemon juice
1 red pepper, minced

Soak peas overnight. In a.m. bring to boil and simmer 1/2 hour. Simmer onion and garlic in oil. Add pepper and cook until soft. Add all other ingredients and mix in with beans. Put into crock pot. Add water to almost cover and cook on high heat 6-8 hours. Stir occasionally.
