BLACK - EYED PEAS (AFRICAN) 
2 c. black eyed peas
2 tbsp. vegetable oil
1 green pepper
1 lg. onion
3 tbsp. tomato paste
Thyme, salt, season to taste
Water

Cook peas as directed on package; drain. Heat oil and add other ingredients. Fry for 5 minutes. Add cooked peas, simmer down for 5 minutes.
