This recipe is used for clam, fish or corn chowder. Cook potatoes (desired amount for each), cubed. Add 1 onion, finely chopped until done. Drain most of water, leaving some for taste. Add clams, fish or corn. Cook until done. Add milk. I use 1 small can evaporated milk along with regular. All chowders are better if cooked the day before using. Set them to cool before putting in refrigerator. When warming them up do it slowly. Do not boil. If a person is watching weight or cholesterol it is best to add one stick no cholesterol butter to this mixture. If not a dieter, fried out salt pork gives it much more flavor. This of course is a saturated fat plus salt. Should not be used by people on diets. |
