CARAMEL SAUCE 
3/4 c. sugar
3 tbsp. fresh orange juice
1 tsp. fresh lemon juice
4-5 tbsp. hot water
1 tbsp. unsalted butter

Combine sugar and citrus juices in a heavy medium-sized saucepan. Heat stirring constantly, over medium heat, until sugar dissolves, then cook, stirring occasionally, until colored medium golden brown, about 8 minutes. Remove from heat, using long handled spoon, stir in hot water and the butter. Serve warm or at room temperature, thinning with more water if necessary. Makes 1 1/2 cups.
