LIGHT VEGETABLE SOUP FOR TWO 
1 med. potato, chopped
1/4 c. sliced carrots
1/2 c. chopped celery
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. instant beef bouillon
1/2 c. water
1 c. tomato juice

Combine all ingredients in 1 1/2 quart casserole. Cover with glass lid or plastic wrap. Cook, covered in microwave on full power 8-10 minutes or until vegetables are tender. 70 calories per serving. Yield: 2 (8 oz.) servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
