NKAKRA (PLAN OR LIGHT SOUP 
1/2 lb. meat, fish or chicken
Mushrooms (sm. pkg.)
2 med. onions, chopped
Tomatoes or paste
1 sm. eggplant or 6 garden eggs
4 pts. cold water
1 tsp. salt
1 tsp. ground pepper

Wash and cut meat, fish into small pieces, add water and onions and put on to simmer. Peel eggplant if desired and cut it. Add it to the meat. Add tomatoes, pepper, add mushrooms if used. Remove and grind vegetables when cooked and return to soup. Allow to simmer until the meat is tender. Serve with fufu, rice.
