SUZY'S ZIPPY MOCK HOLLANDAISE 
This is a great substitute for Hollandaise, and because it contains no butter, it will not separate. If using with Eggs Benedict, butter the bread well to get that extra richness.

2 egg yolks
1 cup regular dairy sour cream
1 tbsp. fresh lemon juice
1/4 tsp. prepared mustard (whole grain or Dijon preferred)
dash of hot sauce (Tabasco)
dash of chili powder
salt and pepper, to taste

Beat egg yolk slightly with other ingredients. Cook over low heat, stirring constantly until thick and smooth. Serve warm over poached eggs, vegetables or store in a covered jar in refrigerator. Reheat gently over low heat.
