“LEISHA'S SIMPLE BAKED APPLESAUCE CHICKEN” IS IN:

LEISHA'S SIMPLE BAKED APPLESAUCE
CHICKEN

1 whole fryer chicken
1 whole onion, diced
1 apple, diced
1 can or 1 1/2 cups applesauce (regular or cinnamon)
seasonings of choice
non-stick cooking spray (Pam)

Preheat oven to 350°F. Prepare a baking dish with non-stick cooking spray. Wash whole fryer chicken and set in dish.

Dice onion and apple. mix and stuff inside of chicken, make sure to remove giblets first and set them aside. Remainder of diced onion and apple can be sprinkled around in bottom of pan around chicken.

Open canned applesauce or use 1 1/2 cups applesauce and pour or brush it over the whole fryer. Pour remainder around fryer in pan. Use your favorite seasonings of choice. I like to use basic salt, pepper, and garlic powder. Lemon pepper is also a good choice.

Place giblets on top of the diced apple, onion and sauce in the pan. Do not cover if you would like a crisper skin. covering helps the fryer stay moist but the skin is left soggy.

Bake at 350°F for 1 1/2 hours to 2 hours depending on the size of the fryer. When poking the fryer make sure juice coming out of chicken is clear. If uncertain use a meat thermometer and check for 160°F internal temperature.

Feeds 4 to 6.
