PEAS AND RICE 
1 bag Cow peas
5 c. UNCLE BEN'S® rice
1 lg. onion
Salt
Pepper
Garlic powder
2 cans coconut milk
Soul food seasoning
4-5 beef bouillon cubes
3 packets Sazon Goya seasoning
Soy sauce
Smoked turkey wings (1 lg. wing, cracked)

Soak peas overnight. Place peas in large pot with cover. Add seasonings to taste, put in turkey wings. Cook beans until almost tender (watch carefully beans will burn). You might need to add more water at some point.

When beans are almost tender, add 2 cans coconut milk and 5 cups UNCLE BEN'S® rice. Add additional seasoning, if you wish. Boil for about 5-10 minutes. Watch carefully so as not to let rice and peas burn or stick. Turn down flame very low. Let rice and peas cook until tender. You might need to add water at some point, a little at a time so as not to make it to mushy.

This will serve a large crowd.
